Celiac Disease

Well, it's been about 2 months now since we found out that Steve has Celiac disease (an allergy to gluten). It's been quite an educational experience. I find myself roaming the grocery store longer than usual since I have to read labels for a lot of things. We have eliminated a lot of our favorite meals from our diet since some of the ingredients are wheat or flour or other gluten items (all cream soups and the most recent discovery-beef consomme-no more yummy flank steak :( . But we're getting there. We find ourselves making new routines, new meals that we enjoy, and actually eating a little healthier since we don't use foods with as many additives. We have also been pleasantly surprised at how many of our (Steve's) favorite snacks are gluten free: a lot of beef jerky, UTZ cheese balls, chips and salsa, & snickers-to name a few (I specify Steve here because I am not as nice as I should be and haven't given up my favorite snacks :)

We received lots of tips from friends, yummy recipes from family and friends, and just found foods at the grocery store that have really helped us out.

A few of our new, regularly purchased items:
THANK YOU Betty Crocker for making my life a little easier by making Gluten free cake mixes. (and thank you Corrine for telling me about them!)
Thank you Meredith for cluing me in on the Bob's Red Mill brand. I haven't actually made any of these brownies yet, but they look tasty!
We've been using a lot more corn starch than we ever have (in fact I don't think I had ever bought it before now). We've had some yummy gravies!
And this Schar brand makes all sorts of gluten free items like these bread sticks, a bread mix, etc.
So, if you have any other tips, advice, favorite recipes etc. that will help us on our gluten free journey I would GREATLY appreciate any and ALL of them!

Holy cow, that does not look like fun. I know how rotten it is to cook around a lot of food allergies.
Looks like you're doing a great job.

Oh, and I always suspected those cheeze balls were made out of nothing natural. Styrofoam and orange paint, right? ;)

sounds like you're doing great (although, yuck, sorry you have to deal with it). Thanks for posting the cream of... recipe to the recipes blog. Been searching for a good one..
